Who doesn’t love pancakes? Whatever the time of day, pancakes are just perfect. In fact, they can be a healthy treat! Today, Neue will be showing you how simple it is to create your own sweet potato pancakes.

These pancakes can be topped with maple syrup or honey. You might choose to use no topping at all. They are already naturally sweet from the sweet potatoes.

What you’ll need

1 medium-sized sweet potato (orange/purple)

5 tablespoons of plain flour

3 eggs (small)

1 teaspoon of baking powder

1/4 spoon of cinnamon powder

How to prepare it?

Step 1 – Peel and cut the sweet potato into cubes. Boil the sweet potato in water until soft. Then, mash with a fork.

Step 2 – Beat the eggs in large bowl. Add the sweet potato, flour, baking powder and cinnamon. Whisk until smooth.

Step 3 – Heat a non-stick pan over medium heat. Scoop 1/3 cup of pancake batter and cook for 3 minutes. Flip when one side is brown.

Things to keep in mind

When it comes to making pancakes, it is important to ensure that dry ingredients are placed in a bowl, while wet ones are placed in another.

When you do combine the two, it is important to only just mix.

Make it a point to not beat it like mad.

When you mix too well, it activates the gluten and you will end up with not so fluffy and light pancakes.

The trick is to mix until the flour is just combined and you can’t see any dry bits. Then stop, and lay down that spoon. This is the secret to pancake perfection.
